Enzyme effectiveness is best described in
terms of enzyme activity, which is measured in units according to standardized
assays. The Food Chemical Codex (FCC) is published by the National Academy
Press. It defines the food-grade quality of enzymes in terms of identity,
strength, and purity based on the elements of safety and good manufacturing
practice. It is the accepted standard of the U.S. Food and Drug Administration.
